Genious Ophelia is our little kitchen tantric elf who likes to create a new recipe each time she cooks something... She never does the same. And because we know this, now we hide in the kitchen to observe her and write down all her secret recipes. Here is one of her delicious pies...
For two lovers
For a 16 cm diameter springform pan:
125 gr puff pastry*
1/2 banana
3 pears
2 apples
1 full table spoon of chestnut pasta
50 ml maple sirop
50 ml soya yoghurt
1/ tea spoon cinnamon
1/2 tea spoon agar agar powder
almond shavings for topping
Preheat the oven to 220°C. Peel the apples, pears and banana. Take the pips away and cut into small pieces. Put in a pot with the mapple sirop and cinnamon. Cook for about 10 minutes on low fire. Once ready take away from fire and add the yoghurt and agar agar. Mix lovingly... Cut two pieces of baking paper. Put one at the bottom of the springform pan. Then put the dough in it. Put the other piece of paper on top with some beans or lentils on top (this is to help the dough not to come up like a balloon!!). Put this funny looking pie in the oven for ten minutes... During these ten minutes you are free to sing, to dance.... then come back in the kitchen and take the "empty pie" out of the oven. Take away the baking paper with what is on it (you can keep it for your next pie). At the bottom of the pie spread the chestnut pasta. Then put the fruit mix and top it with some almond shavings. Say few loving words to the pie and put it in the oven at 200°C for 25 minutes. Once done, leave it to cool down so the agar agar will have time to do its thickening work... Take it out of the springform pan and put it on a lovely plat.... then savour it after a meditation with a cup of tea around a fire (the fire is optional but recommended!)
*Puff pastry.... Sorry, but I don't make it. It just takes too much time and patience, that I have, but not for this!! So, I buy the dough in the organic shop. They make it so good. I am not going to compete with them! And like this I always have some in the fridge. When you buy it in your organic shop be careful that there is no sugar in it and that they use oil instead of butter.
